Vinification:
The grape bunches are manually selected in the winery before crushing. The grapes are destemmed and crushed followed by a light pneumatic pressing; decanting during 36 hours in an inert environment; alcoholic fermentation during a minimum of 20 days at a temperature of 14ºC; 2/3 ferments in stainless steel tanks and 1/3 ferments in new Allier ?extra fine grain? medium toast + French oak barrels followed by battonage over total lees until bottling.
Aroma:
Elegant mineral aromas and ripe yellow fruit notes
Tasting Notes:
High quality wood, discrete and very well integrated. It reveals an excellent acidity, good flavours concentration with a long and delicate finish. Best with light mediterranean dishes and various types of fish.
