Ageing:
Oxidative ageing, with successive rackings, developing a rich and complex bouquet. The wine is then aged in wooden casks or barrels, after which the final blend is produced by mixing various vintages with an average age of approximately 10 years.
Vinification:
After reception and quality control of the grapes, they are destemmed, crushed and placed in the fermentation vat. Alcoholic fermentation then begins, and takes place with intensive skin maceration, always at a controlled temperature. This lasts for around 3 days before being interrupted by adding wine brandy.

A delicate aroma with notes of dried fruits and wood
