Vinification:
Cold pre-fermentative maceration during 1 day followed by a 2-day fermentation with pump overs before the fortication with brandy. The wine matures in casks or in larger wooden vats. The cool ambient temperature of the Gaia cellars and its location near the coast is ideal for the lengthy maturation of Port. Vintage Port comes from a single exceptional harvest. It?s bottled after ageing 2 years, ending its process of mature in bottle until it?s ready to drink
