About:
Douro traditional vineyard management. Extreme care with the vineyard leaf management and with the relationship of the number of leafs/fruit.
Vinification:
The grape bunches are manually selected in the winery before crushing. The grapes are destemmed and crushed followed by 12 hours of pre-fermentative maceration at 34ºC in order to take advantage of the natural endogenous enzymes. Inoculation with selected yeasts; alcoholic fermentation for a minimum of 10 days with temperature control. Malolactic fermentation in new Allier ?extra fine grain?, medium toast + french oak barrels (36 months air seasoned).
Aroma:
Great aromatic intensity, complexity and aged bouquet notes evidenced by the dominant grape variety
Tasting Notes:
Full-bodied with pronouced fruity flavours and firm, structured tanins displaying great layering, complexity and concentration. Very long and evolving finish.
Suggestions:
A perfect pairing for red meat, roasts and soft cheeses
