The grape bunches are manually selected in the winery before crushing. The grapes are destemmed and crushed followed by 12 hours of pre-fermentative maceration at 34ºC in order to take advantage of the natural endogenous enzymes. Inoculation with selected yeasts; alcoholic fermentation for a minimum of 10 days with temperature control.
