About:
The grapes are sourced from vines with 30 years old and with predominant exposure North-East. Vineyards are planted on small landings of schist soils.

Ageing:
18 months in 400 litre new French oak barrels
Vinification:
Grapes are hand picked, transported to the winery in small plastic crates and chilled at 5°C - 6°C. A manual triage was undertaken before the grapes being destemmed, crushed and subjected to a thermal shock. Then, the must is decanted and softly pressed until the necessary clarity. The fermentation is carried out in small stainless steel tanks during one month at temperatures between 15°C - 16°C.
