Ageing:
After this period the wine is cold stabilised, filtered and bottled, and aged in the bottle for around 3 months before being sold
Vinification:
Alcoholic fermentation is extensive, taking place in stainless steel vats for a period of 15 days at a controlled temperature of around 12ºC. Following alcoholic fermentation, there is a first racking off to separate the gross lees, after which the wine is aged for three months during which the fine lees are stirred.

Excellent acidity, giving it the required freshness
